Recipe Idea: Roasted Sweet Potatoes & Figs
Lockdown’s encouraging me to dust off the recipe books and try new dishes with our limited resources, so thought I’d start sharing them.
I miss going to a local restaurant that does something amazing with sweet potatoes and I wanted to copy this. The restaurant gets inspiration from the book Jerusalem by Yotam Ottolenghi* which I was given for my birthday.
I came across a roasted sweet potatoes and fresh figs recipe and decided to give this a go.
I used dried figs instead of fresh, and didn’t use goat’s cheese because our cheese stock is limited!
I’m a huge balsamic vinegar fan, as it’s full of flavour and most brands are low on calories. I used the Ponti Glaze with Balsamic Vinegar from the Ciao Gusto Ponti Range at Ocado, which currently has 15% off throughout April 2020.
The glaze is a gorgeous tasting, authentic Italian ingredient which can be used in a range of dishes. It went really well with the spring onions, figs, chilli and sweet potatoes.
I would never have thought to roast sweet potatoes with a fruit like figs alongside spicy chilli, but the combination is stunning.
The glaze tops it off and next time I’m going to try the dried apricots I have left in the fruit drawer.
